i made a tuna dish last night that was YUM! and super easy. i made the recipe up, so you could add your own variations or substitutes depending on what you do/don't like. here it is:
1 large sashimi grade tuna steak (if you don't like your tuna sashimi style, then any steak will do).
can of black beans
Coat the tuna steak in some salt, pepper, and cumin. pour a little olive oil into a pan (we used a grill griddle pan..or whatever it's called??). sautee steak for just a few minutes on each side (or longer if you like it cooked more). meanwhile, make black bean salad. drain can of beans and pour into a bowl. add sliced red onion, grated carrots, fresh cilantro, a dash of salt and the juice of 1/2-1 lime (depending on how limey you like it :)). I think this salad would also be good with some tomato and avocado, but we didn't have any. soooo...continuing on.....
remove tuna and cut into slices. put black bean salad onto a plate and top with slices of tuna! it's that EASY!! you could also drizzle on a little soy sauce or chipoltle sauce. We had a side of soy and chipotle (courtesy of my good friend....thanks for the sauce Natalie!)for dipping which worked well also.
This dish was super easy and fast. not to mention yummy and healthy! now that's my idea of a good time.
